<h2>Vegetar bolognese med linser – Overaskende god</h2>
<p>Linser er egentligt et helt fantastisk produkt. De er sunde, smager godt og billige. Deres proteinindhold er højere end nogen kødsorter, hvilket er med til at give dig alle de aminosyre du har brug for, hvis du ikke får så meget kød gennem din kost. Alt i alt er det fremragende.</p>
<p>Jeg ved godt det er farligt at røre ved klassikere. Personligt elsker jeg en god bolognese. Det smager jo helt fortræffeligt. Men hemmeligheden bag en god bolognese er tid og ingredienserne, ikke kun kødet. Og den her bolognese med linser er ikke nogen undtagelse. Den er bare tæske lækker!</p>
<p>Hemmeligheden i denne opskrift er ligeledes tid og ingredienser. Jeg starter ud med en base af; løg, gulerødder og selleri. Det er ikke den store hemmelighed. Det er basen i mange italienske retter. Men jeg giver min tid. Basen står og småsteger i 20-30 minutter. Det sikrer grøntsagerne en kraftig karamelisering. Noget der er helt essentielt, for at skabe den dybde, du typisk opnår ved at bruge kød.  Man kan sammenligne det med kød således. En stegt bøf? Mums. En kogt bøf? kedeligt. Det samme gælder grøntsager.</p>
<p>Først efter den lange og grundige stegning, tilsættes resten af ingredienserne. Og endnu engang. Masser af tid. Jo længere den står, jo kraftigere bliver retten.</p>
<p>Jeg synes du skal prøve at lave den her ret. Jeg er i hvert fald kæmpe fan. Du får også en kæmpe portion ud af det. så der er muligvis nok til at fryse ned. Det havde jeg og nu har jeg lækker bolognese i fryseren til de kolde aftener. Eller de pludselige middagsaftaler!</p>

Og mos er altså bare hamrende lækkert. Især hvis der er masser af smør i ;). Vi bor jo i Danmark, et land med meget regn. Og på sådan en kold regnvejrsdag, er det simpelthen bare så lækkert at kunne hygge sig med en portion varm lækker simremad. Denne gang var det med kalkunlår, kartoffelmos (ja, der var rigeligt smør i) og en lækker frisk rødkålssalat – råmarineret i honning, sennep og æbleeddike. Så hvis du har lyst til en solid, men virkelig lækker ret, så skynd dig at lave den her ret. Det er ret lækkert.</p>
<h2>Kalkunlår og øl – et ret perfekt match</h2>
<p>Jeg har ikke beskæftiget mig meget med kalkunlår gennem mine kulinariske eventyr. Men da jeg forleden dag opdagede nogle store lækre kalkunlår i køledisket nede i Lidl (ja Lidl, hvem skulle have troet det?) måtte jeg bare købe dem. Kalkunkød minder meget om kylling, men det er lidt mere kraftigt i smagen. Derfor ville jeg ikke give det et for kraftigt modspil i form af eksempelvis rødvin. Valget faldt derfor en belgisk ale jeg fandt brugsen. Den var hverken for lys eller for mørk. Du kan altid købe en lysere øl, en hvedeøl kunne sagtens bruges. Hvis du vil have lidt mere bitterhed og tyngde i din ret, så brug en mørkere øltype. En mørk Ale eller måske en porter, kunne bruges. Men pas på, personligt synes jeg det bliver for voldsomt. Men hver sin smag :).</p>
<p>Det er som sagt en simreret. Og kalkunlår er store. Derfor fik de 2,5 time i ovnen ved 150 grader. Det lyder måske af meget. Men de var så møre og saftige at de næsten røg af benet, da jeg tog dem op.</p>
